Recipe: Seafood Quiche

This is one of my family’s absolute favorites for breakfast or brunch. It is always a hit with guests, too. Growing up, one of my aunts made it for special holidays and I think of her every time I share the recipe. It is very easy to make and, for those who don’t prefer seafood, substituting 1 cup or so of diced ham, ground sausage, or bacon pieces works just fine. Enjoy and let me hear how it goes for you!

pastry pie shell
3 large eggs
pinch of salt
pinch of pepper
pinch of nutmeg
½ cup heavy cream or milk
1 cup grated cheddar
1 cup small shrimp*
pastry pie shell

Beat together eggs, salt, pepper, nutmeg, and cream; set aside.
Place cheese and shrimp in pie shell; then pour mixture over.
Bake at 375 degrees for 30-35 minutes.
