Skillet-fried potatoes are a must have recipe for home cooks. This versatile recipe is fabulous with a steak or burgers or with bacon and eggs for a fantastic and economical “brinner” (breakfast for dinner.)

2 to 2 1/2 pounds potatoes, approximately 6 cups, cubed

1 to 2 Tablespoons garlic and herb seasoning

salt (to taste)

3 Tablespoons oil

In a large skillet with a lid heat the oil over moderate heat until it shimmers.

Add the potatoes and sprinkle with the seasoning.

Cover and cook for ten minutes.

Flip the potatoes and season with more of the garlic and herb seasoning as desired.

Cover and cook for another ten minutes or until the potatoes are tender.
