We lead a busy family life so I don’t have a lot of time to spend in the kitchen cooking a large meal every day. I have discovered that utilizing my slow cooker makes it much easier for me to prepare a good meal for my family. I can get a meal started in the morning, before my work day begins. Then, when the work day is done, my main dish is ready. All I have to do is add a few sides and dinner is served. This means a lot less pre-packaged meals, a lot less fast food, and a lot less eating out. We save money, eat a good home-cooked meal, and we enjoy one another’s company.

Meatloaf makes a great main dish for a hungry family and it cooks well in a slow cooker.  Here is how I prepared Crock Pot Meatloaf for my family.

This recipe calls for these simple ingredients:
4 pounds lean ground beef
2 cups milk
2 Cups dry cornbread stuffing
2 envelopes onion soup mix
3 large eggs
1 cup of ketchup
1 can of Original Rotel Diced Tomatoes & Green Chilies

In a large bowl combine eggs, milk, bread crumbs, and soup mix. Mix well.

Then add the meat. Mix it all up. Then shape the mixture into an oval.

The oval mixture should not touch sides of your slow cooker.

Cover and cook on low for 6 hours or high for 3 hours.

And . . . the final result is . . . YUM!
